A workable IQF broccoli floret purchase starts with four points agreed before the quotation: the floret size and stem length you need, the appearance standard you will inspect against, whether the product is blanched and how it will be used, and a sample checklist both sides sign off on. Agreeing these first avoids the most common dispute in this category — a shipment that is technically “broccoli florets” but wrong for the application. Size and stem numbers below are buyer-side examples; Smiler Food’s confirmed values are quoted against your specification, not assumed from this guide.
Define floret size and stem requirements
Floret size is usually described by head diameter or floret length, but there is no single industry-wide grade — one supplier’s “medium” can be another’s “large”. State your target as a range in the inquiry (for example, “florets 30–50 mm” — your target, not a Smiler stock size) and ask how the supplier measures it: head diameter, floret length, or sieve fraction. Two quotations for “medium florets” are not comparable unless both state the method.
Stem length deserves its own line because it changes yield, appearance and cooking behavior. Longer stems mean more trim waste for foodservice portioning; shorter, neatly trimmed stems give the compact retail-bag look. Ask how stem length is measured — typically from the cut end to the base of the floret head — and state your maximum acceptable length in the inquiry. Confirm Smiler Food’s available sizes and stem standards against your target; where a value is not yet published, your target becomes the starting point of the quotation.
Agree on the appearance criteria to inspect
Appearance is where buyer and supplier most often discover they meant different things, so write it down before the sample arrives:
- Color uniformity — even, dark green florets; agree on the tolerance for yellowing or browning, which signals over-maturity or poor handling.
- Bud compactness — tight, closed buds; open or flowering buds break apart in cooking.
- Breakage and fragments — small broken pieces and loose buds are normal in handling, but their share should have a per-weight limit. State whether the limit applies to fragments below a certain size.
- Foreign matter — leaves, over-length stem pieces, and any non-broccoli material; agree on a per-weight limit and the inspection method.
Confirm every one of these against Smiler Food’s specification sheet and QC records — the sample and the shipment must be judged by the same written standard.
Confirm processing and intended use
Blanching. Most IQF broccoli for food use is blanched before freezing: the brief heat treatment deactivates enzymes, stabilizes the green color and shortens final cooking time. Confirm from the specification sheet whether the product you are buying is blanched — and do not treat “blanched” as “ready to eat”. Blanched frozen broccoli still needs full cooking; the cooking instruction must come from the product’s own documentation, not from an assumption.
Freezing and storage. Confirm the product is individually quick frozen (pieces flow freely, no clumping), stored at -18°C or below, and never refrozen after thawing.
Intended use drives the specification. Retail frozen bags are appearance-critical: color uniformity, bud compactness and low breakage matter most. Foodservice and industrial use (soups, ready meals, stir-fry mixes) weight yield, consistent cooking and stem-to-head ratio more heavily. Tell the supplier the end use in your inquiry — it changes which tolerances are worth negotiating.
Build a sample review checklist
Assess the sample in your own process and record the results with the supplier’s lot information:
- Floret size range and measurement method confirmed against your target.
- Stem length within your stated maximum; cut ends clean.
- Color: even dark green, no yellowing or browning beyond the agreed tolerance.
- Buds compact and closed; no flowering heads.
- Fragments and broken pieces within the agreed per-weight limit.
- Blanching status confirmed; cooking test in your own process (thaw behavior, texture after your standard cook time).
- Packing suits your handling; storage at -18°C or below.
Prepare a comparable broccoli quotation request
Send every supplier the same specification sheet:
- Size and stem — target floret size range, maximum stem length, and how both are measured.
- Appearance — color and bud-compactness requirements, limits on fragments/broken pieces and foreign matter per inspected weight.
- Processing — blanched or unblanched, freezing method, storage conditions, and the cooking basis from product documentation.
- Packing and order terms — carton or bag sizes, quantity, destination market, target shipment timing, documents required (specification sheet, QC records).
A supplier who can answer all four precisely is easier to compare than one who quotes on “IQF broccoli florets” alone.
