Broccoli and cauliflower arrive on the same truck, go into the same freezer, and get ordered by the same buyer — which is exactly why they get confused. They are different vegetables with different floret structures, different blanching behavior, and separately defined specifications. A floret size copied from a broccoli specification onto a cauliflower order is not a specification at all.
Two vegetables, two specification logics
Broccoli carries green florets on branching stalks. The buying unit is the floret, and the three numbers that define it are floret diameter, stem length, and trim level — they decide yield, plate appearance, and how the piece cooks. Cauliflower carries white curds cut into florets. It is also bought by the floret, but cauliflower florets are graded on their own scale: do not specify cauliflower floret size from a broccoli page.
Blanching is the second fork. Both vegetables may be blanched, and the blanching endpoint affects color retention and cook time in ready meals — but the handling and cut specifications differ between the two. Confirm blanching status per order for each vegetable separately; a blanching assumption carried over from one to the other is a common source of color complaints.
| IQF broccoli | IQF cauliflower | |
|---|---|---|
| Vegetable | Green florets on branching stalks | White curds, cut to florets |
| Buying unit | Floret (diameter, stem length, trim) | Floret (size and stem trim, own grading scale) |
| Blanching | Confirmed per order — affects color and cook time | Confirmed per order — no assumed process claims |
| Ready-meal use | Consistent floret size for frozen entrees | Composed trays, specified by floret size and stem trim |
| Foodservice use | Stir-fries and sides, portionable | Sides where uniform size protects plate appearance |
| Soup / puree use | Weight-dosed ingredient | Weight-dosed; trim quality matters more than grading |
| Key specification risk | “Florets” wording must be confirmed against actual supplied cut | Oversized stems read as waste on a foodservice plate |
Specifications to compare before sampling
| Specification | IQF broccoli | IQF cauliflower |
|---|---|---|
| Available form | Florets, IQF (actual supplied cut confirmed per spec) | Florets, IQF |
| Floret size / stem length | Open item — confirm your target | Open item — confirm your target |
| Color / grade | Confirmed per specification | Open item — state your requirement |
| Blanching | Open item — confirm per order | Confirmed per order |
| Foreign matter | Cleaned; limits per specification | Cleaned; limits per specification |
| Packing | Bulk cartons or bags, per inquiry | Bulk cartons, per inquiry |
| Storage | -18°C or below; do not refreeze after thawing | -18°C or below; do not refreeze after thawing |
| Documents | Spec sheet and COA on request | Specification sheet and QC checkpoints on request |
Read the broccoli column carefully: the supplied cut itself is an open item. If your line needs cuts or chopped broccoli rather than florets, say so in the inquiry — do not let a “florets” title define a product your line cannot use.
What to record during a product trial
- Floret uniformity: size spread within a weighed portion — mixed sizes cook unevenly in one tray.
- Stem trim: stem-to-floret ratio and whether oversized stems would read as waste on your plate.
- Color after cooking: cook a portion by your method and check color retention against your standard — this is where blanching differences show.
- Foreign matter and defects: per inspected weight, against your specification limits.
Information to include in your RFQ
- Product name: IQF broccoli or IQF cauliflower — never “broccoli/cauliflower”
- Target cut (florets; or cuts/chopped if that is what your line needs)
- Floret size and stem-length targets, stated separately per vegetable
- Blanching requirement, stated per vegetable
- Application: ready meal, foodservice, or soup/puree
- Packing, quantity, destination market, target delivery time
- Whether you need a pre-shipment sample from the offered lot
