IQF Spinach Leaf vs Chopped vs Balled: Choosing the Form

IQF Spinach Leaf vs Chopped vs Balled: Choosing the Form

IQF spinach comes in three forms — leaf, chopped, and balled — and buyers routinely order the wrong one. The error is always the same: specifying by price instead of by application. Leaf costs more than chopped for a reason, and chopped fails in a visible-leaf dish for a reason. Match the form to what your product needs the spinach to do.

What each form is for

Leaf is for dishes where spinach must read as spinach. Pasta dishes and ready meals where the visible leaf is the selling point — the specification that matters is leaf integrity after thawing and cooking, not just leaf size going into the freezer.

Chopped is for products where spinach is distributed through the matrix. Pie fillings, sauces, and dips are formulated by weight, and chop fineness decides mouthfeel — too coarse and the filling eats unevenly, too fine and it loses character.

Balled is portion control. Foodservice operations dose by the ball: one ball per serving, no scale, no waste. The specification that matters is ball weight consistency.

Leaf Chopped Balled
Spinach role Visible — the leaf is the selling point Distributed — weighed into the product Portioned — dosed per serving
Typical applications Pasta dishes, ready meals Pie fillings, sauces, dips Foodservice portion control
Key specification Leaf integrity after thawing/cooking Chop fineness (mouthfeel) Ball weight consistency
Do not use for Fillings (paying for visibility you bury) Visible-leaf dishes (wrong texture) Lines that formulate by weight

Do not buy chopped for a visible-leaf application, or leaf for a filling. Confirm the form target before quoting — the form is the product.

What to record during a product trial

  1. Leaf: integrity after thawing and after cooking by your method — does the leaf stay recognizable on the plate?
  2. Chopped: distribution through your filling or sauce at your inclusion rate; mouthfeel against your product standard.
  3. Balled: weight consistency across balls in a weighed portion; portion behavior from frozen.
  4. For all forms: color against your grade requirement; foreign matter per inspected weight.
